Solutions of lithium chloride as reference sources of water activity above 0.6 and between 5°C and 45°C

In view of the uncertainly about the exact water activity (aw) of some saturated salt solutions used as reference sources, the use of unsaturated LiCl solutions as isopiestic standards for calibration of aw-measuring devices, is proposed. The ion interaction model of Pitzer and his associates is use...

The ion interaction model of Pitzer and his associates is used to predict the aw of LiCl solutions for the whole range of aw in which microbial growth may occur, and at temperatures between 5 and 45°C. It is shown that there is a very good agreement between different literature experimental aw data and predicted values. The calculated aw data are presented in tabulated form at 0.5% weight intervals and at temperatures between 5 and 45°C. © 1986 Academic Press Inc. (London) Limited. Fil:Kitic, D.
