description Purpose: Design a circular and intelligent process for the use of waste from the fishing industry in the city of Mar del Plata (Argentine Republic) through the cultivation of mushrooms. Methodology: An experimental quantitative methodology is adopted through the cultivation of oyster mushroom (Pleutorus sp) and reishi (Ganoderma lucidum) inoculate using a substrate made up of a proportion of anchovy (Engraulis anchoita) waste with a high content of sodium chloride. and plant residue (rich in lignin and cellulose). Results: In the experimental study, results were obtained on the selection, conditioning and composition of the inputs for the design of the fungal production process. In the incorporation of inputs, the secondary inoculate of oyster mushrooms (Pleutorus sp) and reishi (Ganoderma lucidum) and the substrate (pine straw and anchovy waste) were used. The composition of the substrate was determined to be 70% pine straw as a source of lignin and cellulose and 30% anchovy waste. The conditioning of the substrate for the development of the crop required a humidification of the vegetable residues, a drying of the animal waste and the subsequent sterilization process. The survival of the mycelium in a substrate with animal waste with a high salt content is similar for the two species of fungi considered, therefore, for the crop to prosper, humidity values below 49% are required. Genuine traceability of the inputs (anchovy and mushroom waste) and of the development process -mycelium- until obtaining, a posteriori, the mushrooms. Research limitations: The experiment is limited to salted products of the species Engraulis anchoita and the quality of the products obtained after the incubation and fruiting processes, as well as the reuse of the substrate, is still under study. Originality: The use of waste from the canning fishing industry, with a high content of sodium chloride, through the fungal kingdom, to reduce the negative environmental impact.
