From a perspective versed in rhythmanalysis, we analyze the multiple rhythms that characterize both the planning and the preparation and serving of traditional dishes to hundreds of diners. These rhythms are marked by materialities, actors and symbologies typical of an extraordinary context. A polyrhythm where the civic character, on the one hand, and the religious or traditional Andean celebration, on the other, cohabit among protocols, expectations, reciprocities and resolution of unforeseen events.
