It reconstructs the social, productive, and environmental context in which rural schools are located, which is characterized by the development of an intensive agricultural system known as agribusiness. It analyzes how the characteristics of this context affect the development of school gardens, an activity that is presented by rural teachers as part of Environmental Education. The analysis highlights tensions between a pedagogical mandate linked to the development of school gardens in rural areas, their reinterpretation as part of Environmental Education, and the socio–environmental problems present in these contexts. The aim is to highlight the limits and potential of their pedagogical work on environmental issues. Este trabajo presenta resultados de una investigación antropológica sobre la relación entre educación y ambiente en escuelas rurales primarias de la región centro–oeste de la provincia de Santa Fe (Argentina). Se reconstruye el contexto social, productivo y ambiental en el que se sitúan las escuelas rurales, el cual se encuentra caracterizado por el desarrollo del sistema agrícola intensivo conocido como agronegocio. Se analiza cómo las características de dicho contexto afectan el desarrollo de las huertas escolares, una actividad que es presentada por las docentes rurales como parte de la Educación Ambiental. El análisis evidencia tensiones entre un mandato pedagógico vinculado al desarrollo de huertas escolares en espacios rurales, su resignificación como parte de la Educación Ambiental y las problemáticas socioambientales presentes en estos contextos. Se busca señalar límites y potencialidades de su labor pedagógica en torno a cuestiones ambientales.
