The first step was to determine the volume of 19% HCl / 100 ml of digestive fluid to reach a sustainable pH of 1.5-2 throughout 45 minutes at 44°C. After that, the capacity of pepsin (1: 10,000NF) involving both HCl concentrations to digest diaphragm pork samples (sows, n= 10 and capon, n= 10) through AD was also established. Finally, the number and viability of ML were determined in sow diaphragm samples (n= 5) experimentally contaminated with encysted ML of the parasite. The 19% HCl needed to be added at a proportion of 1.7% to allow digestive fluid to reach the proper pH level through the complete laboratory process. The weight of muscle samples before and after laboratory process, shown a digestion upper to 95% without difference between both HCl employed (H= 0.58; p= 0.9). No differences were recorded between both HCl formulations in the number and viability of ML recovered after the digestion of samples experimentally contaminated (H= 0.58; p= 0.9). Preliminary results suggest that fuming 37% HCl could be replaced by a commercially available formulation (19% HCl) in the DA for the diagnosis of T. spiralis in pork meat. Se evaluó el uso de una formulación comercial de ácido clorhídrico (HCl) 19% como alternativa al HCl 37% fumante recomendado para el diagnóstico de larvas musculares (LM) de Trichinella spiralis por la técnica de digestión artificial (DA). Primero, se determinó el volumen de 19%HCl /100 ml de solución digestora necesario para alcanzar y mantener un pH de 1,5-2 durante 45 minutos a 44°C. Luego, se determinó la capacidad de la pepsina (1:10,000 NF) para digerir por DA muestras diafragmáticas porcinas (cerda adulta, n= 10 y capón, n=10) en medios acidificados por ambas formulaciones de HCl. Finalmente, se determinó el número y viabilidad de LM obtenidas por DA (con HCl 19% ó 37%) de muestras diafragmáticas de cerda (n=5) experimentalmente contaminadas con LM encapsuladas. Se requirió la adición de HCl 19% al 1,7% del volumen de agua destilada para lograr una solución digestora estable con el pH requerido durante la totalidad del proceso estudiado. Se obtuvo una digestibilidad mayor al 95% en todas las muestras de músculo sometidas a DA, sin existir diferencias significativas respecto a la formulación de HCl usado (H= 0.58; p= 0.9). No se hallaron diferencias significativas entre ambos HCl en el número y viabilidad de LM recuperadas por DA de muestras experimentalmente contaminadas (H=0.58; p=0.9). Los resultados preliminares indican que el HCl 37% fumante podría reemplazarse por una formulación comercial (HCl 19%) en la DA para el diagnóstico de T. spiralis en carne porcina.
