This study aimed at the detection of socioeconomic, biological and cultural risk factors related to obesity, through the study of the relationship between obesity and food habits in a sample of 1296 adults belonging to the low socioeconomic stratum, using a transverse casecontrol design.Thestudywascarried out in the city ofCórdoba(Argentina), in2005.Foodconsumption patterns, living habits and nutritional condition of the subjects were assessed using anthropometric measurements and interviews dealing with frequency of food consumption and physical activity. The variables involved were described and associations estimated using multiple logistic regression models. Overweight and obesity showed a predominance of 36% and 23%, respectively. Women were found to register lower values. As to overweight, subjects in the 50-65 age group exhibited a higher risk than those in the 18-34 group; a higher educational level was found to be a preventive factor against obesity. Subjects lacking physical activity exhibited a higher percentage (33%) of overweight risk. In subjects with a high level of energy consumption, obesity risk increased by 64%. Adequate protein consumption diminished overweight risk by 53%. Consumption of dairy products, infusions, non-alcoholic drinks and legumes were found to prevent overweight and obesity. The consumption of meats, eggs, non-alcoholic drinks and snacks fostered overweight, as did cheeses and snacks with obesity.

La obesidad se ha manifestado con una frecuencia cada vez mayor en las últimas décadas, afecta especialmente a la población urbana pobre y no tiene las mismas características ni el mismo origen que la obesidad en poblaciones ricas. Este trabajo tuvo por objetivo identificar factores de riesgo bio-socioculturales y del consumo alimentario asociados a la presencia de obesidad. Se estudiaron las asociaciones entre la presencia de la obesidad y el consumo alimentario en este estrato, mediante el diseño de un estudio transversal, tipo caso-control, con una muestra de 1296 adultos del estrato socioeconómico bajo, en la ciudad de Córdoba, en el año 2005. Mediante mediciones antropométricas y una entrevista de frecuencia de consumo de alimentos y actividad física, fueron indagados los patrones de consumo, hábitos de vida, y el estado nutricional de los sujetos. El análisis describió las diferentes variables y estimó las asociaciones utilizando modelos de regresión logística múltiple. La prevalencia de sobrepeso y obesidad fue, respectivamente, igual a36%y23%.Las mujeres, en términos generales, tuvieron menos chance de tener sobrepeso y obesidad. Poblaciones de sujetos con edades entre 50 a 65 años presentaron el mayor riesgo de sufrir exceso de peso con respecto al de menor edad (18-34 años), y el nivel de instrucción más alto fue un factor protector contra la obesidad. El grupo de sujetos con falta de actividad física presentó un 33% más chance de tener exceso de peso. Entre las personas con un consumo energético alto la chance de padecer obesidad se incrementó un 64%. El consumo adecuado de proteínas disminuyó en un 53% el riesgo de presentar exceso de peso. El grupo de lácteos, infusiones, bebidas acalóricas y legumbres actuaron como protectores frente al exceso de peso, este último tuvo el mismo comportamiento frente al padecimiento de obesidad. El grupo de carnes y huevos, bebidas calóricas analcoholicas y snacks fueron promotores del exceso de peso y para el grupo de obesos fueron el consumo de quesos y snacks.
