Lipoxygenase-catalyzed dehydration of furylhydroperoxides
3-alkoxycarbonyl-5(1-hydroperoxyalkyl)-furans 1 are changed into the corresponding 5-acyl and 5-formyl derivatives 2 by a lipoxygenase-catalyzed process.
