Sumario: | The present work studied the relationship between growth behaviour and minimal water activity aw for S. aureus C-243 grown aerobically in laboratory media when aw was adjusted using sodium laclate, sodium acetate, erythritol or xylitol. When sodium laclate was used to adjust aw no growth was observed at aw = 0.90 after 10 days of incubation at 30 °C. When polyols (erythritol and xylitol) were used to adjust the water activity, growth of S. aureus was inhibited at aw values as high as 0.94 or 0.92. © 1986 Academic Press Inc. (London) Limited. |
